Can I remote play my jailbroken PS4 5.05 on my iPad Pro screen?

I would love to use my ipad as a screen

I'm pretty sure you can, but you'd have to use the online-update blocking patch for Remote Play to keep your PS4 FW low.

If I remember correctly the android version of the remote play app was patched so you can use 5.05 on it, so unless you have a hacked version for IOS it may only work if your console is on 6.50+

But idk.
