it's actually pretty wonderful for when you are speaking to someone and don't want them to know the gender of the third party - they can't figure it out

That's one way to use "they" in English. See the movie Chasing Amy for an example.

Japanese is even more fascinating in its opposite extreme. It has different pronouns for each gender but also age, social standing, status, several levels of politeness, and multiple versions depending on time of day, year, local weather, and, as Douglas Adams once said, whether the speaker is travelling back in time with the intent of becoming his own grandfather... and despite all that they manage to speak with complete ambiguity when needed.
