Someone plz tag me when this gets added
So I found a manual way to do it, but checking with a friend the address of the timer was different between us and I don't know anything about making a table so I'll just post how to find it:

The 5 hour timer for the demo starts after the first few tutorial missions, the game tracks this with a value that keeps increasing by about 1000 per second (seems somewhat random, when freezing the value at 0 it always jumps between like 960 and 1090~). So you should be able to find it if you do a 4byte search with the value roughly where you'd expect it (say you spent an hour of the timer, that'd be 60x60x1000 = 3,6m so you search between 3,5m and 3,7m) and then find a value that keeps increasing while you're outside of menus and static while you're in menus, once you found it just set it to 0 to reset the timer back to 5 hours, you can freeze it there while you're running CE as well.

Thanks man I successfully reset/froze the timer using your method. Maybe a bit more details for those who want to try:
1. Start by searching the value between as shared by sneedolin.
2. Let the game runs a bit so the timer changes.
3. Scan next values using Scan Type "Increased value". This will reduce the number you need to check
4. Keep doing step 3 until you narrow down enough the values (addresses with black value not red)
5. Let the game runs until you confirm the right address (in my case I found 3 addresses with the same value but when you change 1 the others change as well.
