Copy dolphin.nro to /switch/dolphin/dolphin.nro. Launch Dolphin through title override: hold R while opening an installed game until the Homebrew Menu appears, then start Dolphin. I just renamed the .nro, I think. I have both the latest version and an older version, so I just renamed the one I wanted to update.
