Just wondering: when playing an open world/sandbox-type game, do you use waypoints to get to certain locations, or can you memorize the map?

I can usually memorize parts of the map for less complex open world games (like Oblivion, except I have to refer to a map when trying to locate a certain area/dungeon/etc.), but not for games like GTA, where there are streets and stuff.

Same here, if I know the map(s) then I'll just take the quickest route. Like in Burnout Paradise, you sort of have to learn the map because you can't really just warp anywhere.
