Milk is bad for you

I was going to say that fermentation is intentional and rot isn’t, but then I realised that’s not even true. There are certain foods that are rotted on purpose, one of them being a specific kind of cheese which is intentionally exposed to flies so that it is infested with maggots. Their digestive fluid gives it a pungent aroma and one-of-a-kind flavour and although the cheese has been banned due to health concerns, local farmers still make it for their own consumption. It’s unclear how much of the Casu Martzu cheese is dairy and how much is maggots and their excretions, but I’m told that it’s “gone off” when the maggots inside are mostly dead.

Yes, kopi luwak. It’s intentionally put through a civek’s digestive system and collected from the poop. Bet it goes well with some milk.

Fermentation is not a complete decay, it goes to a point it is self sustaining and becomes its own preservation vessel due to the acid produced by bacteria overwhelming them and eventually killing them leaving the fermented good behind.
The lactic acid kills what we think of as spoilage bacteria - but the bacteria that fermented the product are usually left alive

Like in yogurt there is still usually live lactobacillus when you eat it

That’s why milk is good for you, even when it’s bad.

What? It’s fancy stuff. A cup of authentic, “wild” kopi luwak costs anywhere between $20 to $100 and even the farmed stuff is $10-$50. It’s too expensive even for a practical joke, so if Costello gave you some, you should thank him.

Anything with so much life in it must be healthy! Just like pond water.

Also conversely not all fermentation is intentional. Monkeys and other animals get drunk off fermented fruit that fell off the trees :grog:

Funny you mention that! Those same animals, upon making this miraculous, alcoholic discovery, intentionally look for less-than-fresh fruit to chase the high. Chimps actively search for and share such fermented fruit as a commodity to improve social bonding. I guess what I’m trying to say here is that cracking a few cold ones with the boys is a primal behaviour as opposed to a modern vice. :grog:
 
Good to see this thread still going strong. Last year I found out that milk was the cause of my temporary upset stomach so I've been cautious ever since.
