I was going to say that fermentation is intentional and rot isn’t, but then I realised that’s not even true. There are certain foods that are rotted on purpose, one of them being a specific kind of cheese which is intentionally exposed to flies so that it is infested with maggots. Their digestive fluid gives it a pungent aroma and one-of-a-kind flavour and although the cheese has been banned due to health concerns, local farmers still make it for their own consumption. It’s unclear how much of the Casu Martzu cheese is dairy and how much is maggots and their excretions, but I’m told that it’s “gone off” when the maggots inside are mostly dead.hence, controlled rot![]()
