no program required.

go to my computer
go to your iPod
tools, folder options
view hidden files/folders
go to ipod control
go to music

it'll have some strange names, but the ID tags are still there.

So once I do this do I copy them somewhere?

Place music on desktop, open iTunes, edit > preferences, advanced tab and tick 'Copy files to iTunes media folder' and 'Keep iTunes folder organized'

Once done, drag your backup folder that you made to the iTunes window and it should place all the music (with the right file names) in your iTunes folder ready for syncing again.

Just put them on a folder on your desktop. Make sure that you have iTunes set to keep your music folder organised. When you import the folder from your desktop to your library, it will sort them back into folders and rename them for you. Then you can delete the folder on your desktop.
