For Infantile Paralyser's IMGview homebrew, theres a program that converts images into a .ipk format, but is there a way to reverse this process (.ipk to .jpg), in case I accidently deleted my originals?

If IMGview is anything like ComicBook DS, the .ipk file is actually just a .zip or .rar file containing all the JPEG files. Try renaming it to .zip and see if you can extract the files directly out of it.
Keep in mind of course that these would be worse quality than the originals, so you'd do better to make sure you have actual backups.
