The Universal-Updater wiki has information on them, including examples and explanations of all the functions. Basically it's just a JSON file with a store info and a store content array with all of the apps, each of which have scripts which tell Universal-Updater what to do to download and install the thing.
If Universal-Updater refuses to load it, make sure that it's valid JSON using https://jsonformatter.curiousconcept.com as JSON is very picky about formatting.
