Hacking How to Edit NPCs, Miscellaneous Content in Hex Editors?

I'm trying to change the villagers in Animal Crossing Wild World, the in-game neighbors and map layout in Nintendogs: Best Friends, and the NPC characters in Petz Hamsters 2. I'm (obviously) very new at this and don't know what values equate to what I'm looking to modify and was hoping someone could help! Using HxD but can download another hex editor if needed

You might be better off using something like this:

Hex Editing often requires you to figure out the save game data format using values you know are in that data set and then changing them to see if you found the right value. It can be tricky if you've never done it and there's a bit of trial and error.
