How to dump a ROM from an arcade machine?

How was the ROM for Mario Kart Arcade GP DX rev 1.18/JP dumped?

A local arcade has rev 1.06/OF installed and afaik that version isn't available anywhere as a ROM.

I would absolutely love to play the version with English voice acting and the item roulette at home, but idk how would you even go about dumping a ROM of an arcade cabinet.

On some machines, the ROM itself may be spread across several EEPROM chips. Luckily, they're usually socketed so dumping them all is fairly trivial with a EEPROM flasher like this:

I know very little about Mario Kart Arcade GP DX, but what I do know is that it's new enough not to be distributed on ROM chips anymore. The game runs on Namco's PC-based arcade hardware (System ES1), and it's highly likely that the game data is stored on a standard hard drive, which is most likely encrypted one way or another.

Arcade GP DX does not run on the System ES1, it runs on the System ES3. ES1 is Linux based whereas ES3 is Windows based.

Those that dumped those games normally have someone on the inside to help them dump the games or somehow gets their hands on the hard drive in those machines.
