Sure, certain arcade cabinets can be connected to an online service to automatically push firmware updates to them, however others (for example MK Arcade GP DX's international version) can't be connected to the internet at all, so how in the hell does the firmware update on them? Is there like some sort of secret website arcade owners can get to which contains the newer firmware images?

Same as any other device... usb. Files will be provided by the manufacturer either by download or physical posted media if they have a service contract although the warranty should cover the first year I would imagine.
