How do you mod the new Game and Watch?

Always make a backup of the G&W firmware first (https://github.com/ghidraninja/game-and-watch-backup) - there is a video and a guide in the description of the repo that'll walk you through the steps. As for getting the G&W to run homebrew, install the CFW patch and Retro Go pack. Retro Go contains emulators for various consoles that it can run, such as the Game Gear and NES.
There's a good Reddit sub, here's a link to its faq post which also links to the excellent discord where you can find the devs and people willing to answer all your questions
