How would I replace things like Text, images/Textures, and audio? I'd like to mod Rhythm Heaven Fever, and (Maybe) Strong Bad's Cool Game For Attractive People, or SBCG4AP for short.

Depends on your reverse engineering skills and programming knowledge. If the game files are encrypted you have to write a decrypter or some form of an injection to allow custom content on to the game or understand the algorithm behind the encryption to once again, write a decrypter but most importantly. Find the file headers of the files. A lot goes into modding games depending on the complexity
