Hacking Force Sign out NNID

Since the NNID shutdown I like to sign out my old NNID account but cant i forgot the password and the email no longer works is there a way to force sign out so i can use Pretendo to sign in also not losing save data on my old profile

You can use a tool called Wii U Account Swap, which lets you manage the account.dat file. Just enter the app using the profile you want to unlink the NNID and press the button to unlink, I also recommend doing an account.dat backup before in case anything goes wrong (you can do that inside the app). Then you just need to link a PNID account via the app itself, and everything should be working just fine

Are you able to use your savegames (the ones generated with your nintendo network account) without any save management in the pretendo account this way?

As far as I know, the saves that are inside your console should still be there, but the ones saved on your NNID probably won't transfer. However I haven't tested to say for sure, you can maybe ask @Nightkingale (the creator of this app) for more info
