How could I extract the audio from my Wii U's HDMI out? I would like to use my PC monitor but it has no sound support.

You can get boxes that split the audio and video but they are expensive.
It would be much easier if the Wii U could output audio over composite/component even when HDMI is being used, sadly I don't think that's the case.

It is not, how much do you think I could get away with; I only want the standard 3.5mm stereo jack.

It's your lucky day, this one is on sale for cheap: http://www.amazon.com/J-Tech-Digital-Premium-Extractor-Converter/dp/B00BIQER0E
Edit: There are even cheaper ones here http://www.ebay.com/bhp/hdmi-audio-extractor but I don't know if they are any good. On Amazon you at least have reviews to go by.

I could swear they used to cost a lot more not long ago.

If you have a Wii AV or Component cable laying around, you can use the audio output from that even if the video is HDMI. Just select "Non-HDMI" or "Both" in the Output-Cable Settings.
