I'm planning on gettting some eShop gift cards, probably 2 fifty dollar gift cards. This is my question, if I use only 20 bucks, can I use the remaining change and can I use another gift card if there is still remaining change? Thanks in advance

When you enter the code, 100% of the card's value binds to your account (NNID or console serial); you don't need to buy something at the same instant, and anyways the "change" is yours to keep indefinitely, so you can enter both cards in a row or keep the other one for whenever you'll need it!
