Attention, I am very noob concerning switch hacks... once hacked, is it possible to still boot to stock "unhacked" firmware to play games online?

Yes if only if an emunand was created for homebrew/hacking stuff with no cfw ever ran on sysnand before, if not you would just get ban.

The thing is you need to be 100% sure that it is not banned, if you ran CFW on sysnand without creating an emunand first you would just get banned from online play,
