Does anyone actually use Gamechat?

I mean, Nintendo dedicated an entire button to it and also added a microphone to the console to make it usable, but has it actually been getting any widespread use at all?

I barely have any Switch friends and none of them have ever wanted to use the service, even though it doesn't require NSO during the trial period.

I do when playing multiplayer with friends. It's fun to see somebody playing a game and just drop in on them too to see if they wanna play together.

It's not the end of the world if it's not something you use though, you can always just remap the button to be something else.

People who like playing games like that, and who would use Discord to do it before, LOVE this feature. Of course it is widely used, relatively speaking. It was a great addition to the Switch 2 and streamers are having a great time with it as well. Never assume a feature you don't use is useless.
