I lack experience with a multimeter so I decided to come on here to make absolutely sure I am doing everything right.

I am using a Cobalt DT-103 multimeter and I have it set to 2000k (Ω) and I am getting a reading of 888.

What temperature should I solder the delicate Instinct NX adapter at? I usually go around 350 Celsius. but I heard that this is a bit hot for the adapter. Looking for advise as I do not want to break a $350 switch.

use the diode reading mode next to the 200ohm range

350 or even 400 does not matter much, it's how long you work on the component and how big the tip you use,

Why continuity? I thought the 20k setting was right. Let me go try continuity.

716 is the reading I get with the mode you suggested.

Can someone else please confirm that I should use continuity mode instead of 20k ohms ?
