I'm sure many of us are PSP users, and a lot of us have probably spent hours customizing it. Whether it be a Custom XMB, different fonts, whatever.

Would we ever see one in the future for the Wii?

Possibly. Custom firmwares are already in the works, and something like BootMii might mean something like this is possible. That said, you shouldn't compare the Wii to something like the Xbox or PSP. Also, read this: http://hackmii.com/2008/06/your-wii-is-not-a-psp/

Oh no, I'd never do that.
I just used the PSP as an example, as it's the only thing that has a 'full' custom firmware.
Everything else (Such as the DS/360/PS2) all either need assistance, or are limited. The PSP was the only one that went all out.

Should never compare between consoles, to be honest you don't even need a "custom firmware"
There are Squidman/crediar and others working on a "replacement" of the system menu...not to call it "custom" though...it's dangerous work...
