So, if limera1n doesn't work for 2g mc ipod touches, and for some reason I'm stuck at the waiting for reboot screen, what can I do to jailbreak one on 4.1?

You should be fine, but quite a few people have labeled limera1n unstable (no news on beta 4's stability though). I can't comment on the limera1n stability issue since I've never used it, but ifish and Scott-105 reported success.
