My iPhone can be set up as a WiFi access point, and the DS can detect it. However, the DS can not connect to WFC using the iPhone, so it never stays connected to the access point. My question is are there any homebrew applications that let you connect to WiFi access points without going through the method provided by Nintendo? I don't actually need it to connect to WFC, just to my iPhone, as I'm using it for network purposes.

Could anyone help? That would be amazing.

I'm fairly certain that the DS can't connect to ad-hoc networks, which is unfortunately what your iPhone is creating (I'm assuming MyWi, right?). Same restriction with the Wii.
