    I'm thinking of getting a replacement shell with a D-Pad for the left Joycon. Are there any games where two buttons need to be pressed at once on the left Joycon that would be unplayable because of this kind of mod? I don't care about two-player games where you use a single Joycon because most of my friends already have their own Switches to use.

    What about games with 8-direction navigation (up, down, etc, up-right, down-left, etc)?

    That should be fine with a D-Pad.

    Nah, only cases would likely be split-joycon multiplayer games, but you've already said you likely won't be doing that much. I think you'll be fine modding on a real D-pad.
