I have an old 3ds that I haven't used in awhile I want to put custom firmware on it and it's currently on 8.1.0-19U Should I update it and then follow to guide to install luma? or is another way better?

Use the guide linked above, there is a table that details what is available on each firmware version. If none of the methods for 8.1 are accessible to you then you can look at updating it, either with a cartridge or online.
