To get Mew in lets go: Buy pokeball plus, transfer from pokeball plus to lets go.
To get meltan in lets go: transfer a pokemon from go to lets go. Use meltan box in Go. catch meltan in Go. then transfer over to lets go.
If you are running a cfw on your switch, hack both into lets go directly...(this step is theoretical, i havent confirmed if the tools are available, but id assume thats what pkhex and similar tools are for)
notes: if you have mew in pokemon go, it cannot be transfered to lets go.

Keep in mind, Meltan can't be evolved in Let's Go; to have a Melmetal it needs to be sent from GO as a Melmetal.
And it is highly unlikely someone will trade you a Melmetal, as they take long time to evolve in GO.
Meltan is easy to get. When you use the mystery box you get from trading a pokemon to Let's Go, they appear constantly for 30 min, and finding shiny ones is also pretty common. I got 120-130 meltan candy just from doing that once, do it 3-4 times and you have enough candy to evolve one to Melmetal. You just have to wait like 4 days between each time you trade a Pokemon to Let's Go since there's a cooldown on the mystery box.
If you know somebody living near you who has a hacked Switch then you can ask them to get Mew and Meltan using PKhex then trade them to you. This way your own save file and Switch NAND can stay clean.
Just do it the legit way. Connect your Pokémon Go to Let's Go and get the mystery box in Go, catch the Meltan, and bring them over to Let's Go.
