I've recently discovered Bloopair, and I wanted to try it with my Switch Joy-Con, but whenever I open Just Dance, the controller turns off. Also do motion control work with Bloopair?

This is a good question, I'd like to know more too since JD14 can be really weird when using a wii mote
 
The Pro Controller doesn't have motion controls. Bloopair makes controllers act as Pro Controllers. So I doubt it will support motion controls. I think you will need to use an emulator on a computer to make a joycon act as a Wiimote.
