TLDR I want to edit my save file of some games. (Note: Only the one not fully online, E.g: ACNH, Xenobalde 2, ...)

1/ What should I do / is there any tutorial for that. (Note: I do see some tutorial just double check, incase there a unique tutorial for this)

2/ What will get me ban from switch? (Note: I do plan to play Online with friend sometime like ACNH and do not planned to mod / cheat online games like smash or splat 2)
Like is it ok to I install CFW to edit save file and keep it (astmophere smt) then go online online no mods/cheat or pirate games. ? Or I need to edit save file then remove everything?

If you edit your save file and then go online, you're risking a ban.
There are some games like pokemon where you can make "legal edits" and if you know what you're doing you can get away with it. But some games may have checks and as soon as you go online if there's something weird in the save file you could get banned. So it's hit or miss.

Now, simply having CFW in a nand you use to go online is a very good risk of getting banned as well. Some people might argue that you can still go online as long as no cheats or mods are in use and no nsps are installed but I'd highly recommend you to not even try it.

You can use HacDiskMount to extract and inject the save files without running any cfw.

I suggest doing everything from RCM mode. Dump your NAND with Hekate, there is a tool someone made to extract the saves from it. Edit what you need, and inject the files into the NAND using another RCM payload.
You're reasonably safe from bans this way, as long as you only do it in offline games (Xenoblade is probably fine not sure about ACNH since that has more focus on the online aspect and is also 1st party, I wouldn't do it in ACNH just to be safe)
Running a save manager in CFW is probably reasonably safe too, but I always suggest avoiding running CFW on your sysNAND ever, just in case Nintendo suddenly decides to add checks in the firmware to detect CFW.

I edited my ACNH save without any issue, even no ban at all.

I only got banned in SSBU, that it.

Nintendo tends to ban you in game but not whole console but if you install NSP so your console will be banned.

All bans have one thing related to them; hacking. So obviously, hacking is what gets users banned. The chances and actions will vary but that is due to Nintendo keeping bans as mysterious as possible. This way, they can get more users banned than if there were clear indications on what users get banned for.

If you want to run the NSP so you need emunand + incognito, so if you are doing properly so ban risk is minimal and if you want with sysnand, so you need a clean backup first and store in safe place, otherwise you are screwed up. Remember to double check to ensure that you are on emunand, not sysnand.

That is what we like to call a gross oversimplification and it is the basis of the lies and misinformation spread about Switch Homebrew over the years. The truth is that it's very complicated and if you aren't willing to consider all variables you're never going to understand.

TL;DR You cannot simplifiy things without losing important information.

If you install homebrew and connect to Nintendo servers on whatever NAND has the hacks, you get on Nintendo's list and those on the list get promptly banned.

Still oversimplifying, you know I'm starting to get why SciresM has such an aggressive stance when it comes to bans and calling the things that cause them piracy. When people like you guys and the influencers go around claiming that homebrew is evil (You're not necessarily doing that but plenty of the influencer Youtubers definately do) and that it's a ban ticket I don't really blame him for cracking down on Forwarders and Signature patches and calling those that use them filthy pirates because honestly y'all fucking deserve it, that's a very fitting title for those that go against homebrew as a whole because they can't stop fooling around with their logs, hack in games, or trying to play pirated games online and on the count of not admitting that they did wrong things they just say "HoMebrEW Is bAd lol".

Never thought I'd see the day when I'd side with SciresM but honestly with some of this crap going around and the sheer prevalence of misinformation I can't really see a better way to combat it because anything less will just result in "Yeah well even with that ur still gonna get b4nned eventually".

I use homebrew on two switches for many years now, don't even remember when I last bootet stock, since I use autorcm. I also played splatoon online multiple times while using sysclk and sysdvr without any problem.
Same for some friends I helped to mod the switch, not a single ban yet.
So unless you mean installing hombrew nsps (those will get you banned very fast, since they use invalid titleids), just homebrew won't ban you.
Cheating and to some degree game modding will get you also banned, together with installing pirated or backuped xcis and nsps.
