I'm in the same boat as Pedro250 I think. Updated from 10.0 to 12.0.1 via daybreak on the lastest atmosphere for the new Pokemon Snap game. Got the new game to run and all my old ones too. Except for animal crossing. Refuses to start even after erasing the game and reinstalling it. I even downloaded the game and updates from a new source, no luck. Using latest sigpatches from ITotalJustice.

I got some errors too but on SoS Pioneers, Pkmn Sw and Zelda BoW. Tried different google sources nsp and xci.
Found the problem with DBI, some updates messes with file (or tickets I do not know, just got them with checking and as result got hash errors). So messing with upd uninstalling it on xci, or applying dlc after install base on nsp got errors.
My solution was get xci bundle from google sources and play it until the game breaks not the best solution but so far Im still playing them.
Maybe, as Impeeza mentioned, some games have rushed dump and sites (or shops) are not interested to review or redump so you need to find a good one to make it work.

For the ones asking for the Forwarders stop working after 12.0.0 firmware update good news: SAK (Switch Army Knife) now has the hability of create NSP fowarders for NRO, https://github.com/dezem/SAK/releases/tag/0.7.8 I Will try now.

Edit:

The function is a GUI for hacBrewPack https://github.com/The-4n/hacBrewPack at the first try the version included on SAK give me errors about msys*.dll libraries missing, I download the latest version of hacBrewPack and replace the one on SAK folder and all works fine (remember to copy your own prod.keys file on the bin folder)

Update:
the new version of SAK https://github.com/dezem/SAK/releases now have a section to create forwards to RetroArch Cores!!!!

I formatted my sd re-made my emummc and voilá: it worked. Now animal crossing is working fine as are all my other games. Only thing left is restore my saves. You could try that to see if it solves your problem too.

The same happens. i deleted the game and then inserted the cart to no avail. The game work fine in sysnand.

I only use my carts to dump so and i tried to dump it a second time (with game card installer homebrew).

Im starting to think the problem is my emunand, maybe it got corrupted somehow. Or my sd card. i will just format the card and create a new emunand. i have my saves backed up so i will only loose time really. thanks for the help to all that helped me.
Same happened to me earlier and it was faulty sigpatches. Once I updated to ams 19.0.1 new sigpatches fixed the issue.

Now after updating to ams 19.0.2 again animal crossing and pokemon snap are the only games not working for me (crashing after Nintendo logo on game start) and they were just fine before updating and even after clean reinstall they still not work.

Ok hear me out. But I had been installing the different sig patches listed in the thread and nothing worked. Every time I tried booting into Animal Crossing it continued to give me the 'Unable to Start Software" "Return to the Home Screen" bs message. So I literally did a shit ton of digging for a few days and stumbled upon something that ended up working for me. Not sure if it will for any of you guys but it's worth a try...

So what I ended up doing was holding down the power button with the switch still on and pressing power options. Now you're going to want to press restart and you want to boot into Maintenance Mode (hold the both + and - volume buttons down at the same time) while it's going through the bootloader screens and past the Nintendo Logo screen. It should pop up with a menu that has three different options, reset all settings, delete all saved data, etc... IGNORE all of those options. All you need to do is press the power button again and then upload your payload and wait for the switch to boot again. Once you boot try and start the games again, Animal Crossing or Pokemon... Animal Crossing absolutely refused to run before I tried this method and I installed it multiple times with every single update as well along with different sig patched because I was unsure about primary vs secondary. This fixed it for me...

You fixed the Animal Crossing not booting issues through Maintenance mode?
If I got it right, you did:
  1. Hold Power Button until the power options appear
  2. Select Restart from the options
  3. When the console begings showing the bootloader screens and the Nintendo screen, press the volume + & - buttons and hold them.
  4. A menu should appear that gives 3 options: Update system, Initialize console without deleting save data, and Initialize console. Ignore all of the options, instead pressing the Power button to shut off the console.
  5. Upload the payload and wait for the switch to boot again.
  6. Once you boot into the Switch, try and start the failing games again.
Was that it to fix Animal Crossing with all its updates+DLC on your end?

Didn't worked for me (and honestly don't see any relation to the issue with this procedure)

Where do you downloaded latest patches? Can you upload your current patches folder to see if they work for me?

Just a quick question I want to restore a save from my emunand and want to take as little chance as possible do sigpatches run by default on sysnand cfw? or do i need to change something in the config?

Patches are based on how your run your CFW, if you used hekate/fss0 build you need hekate patches, if you use Fusee-Primary then you need fusee patches.

let me rephrase i'm looking to use jksv and i'm asking if sigpatches apply to sysnand cfw by default and if they do do they bring risk of a ban moreso than the save backups? If they do how do i set it up so they don't apply to the sysnand cfw

CFW works either on SysNAND or EmuNAND. And in both cases could use sigpatches.

Remember to read guides in order to avoid get banned.

what i'm trying to figure out is how to make sure they don't get used on sysnand if it even matters if they do.

They work both in Sysnand and Emunand, if there is an Emunand, by default it launch Emunand, if you really want to avoid it then take out sysnand config on Hekate if you use hekate as bootloader.

How did you create the dump? I'm only finding old homebrew apps that won't work anymore :/

And ES?

Goldleaf is able to dump it.

No ES files were created.

Edit: Never mind, issue on my end with ES files. Nonetheless, same thing with the ES file, MD5 matches 12.0.0 one.
