I already have cios and stuff, so how exactly do I make this thing work? And what kind of external hard drive should I get? Done on a vwii by the way.

Yes,2 TB is maybe a Way to much.
But for GameCube and Wii Games it is maybe ok and good Space.
And more is really not needed.

Also I am not a Friend of an "All in One" HDD....

I think they do not really have this Intention because the "WD My Passport Series" also have no extra Power Supply.
