You won't see any diff, it's mainly a memory usage thing afaik.

I honestly don't really understand why the mesosphere is needed for an ordinary person like me? It will allow you to go online on games downloaded from the Internet or will it eliminate the constant use of payload at launch?

Normal users (should) notice no difference in anything.
The goal of it is to have a fully open source reimplementation of the Horizon kernel.

Override? But why? Why is Horizon worse?
Well, it's not really intended to be "better", it's suppose to be an accurate reimplementation of Nintendo's kernel.
But it being open source will make learning about the kernel much easier, and creating modifications/extensions will also be much easier.
It was created because Scires loves Horizon (it is a really cool/unique OS) and wanted to write an open source version of its kernel :P

It turns out that there will be no new functionality? Is this just an "experiment"? Without practical use? I just don’t understand when the mesosphere will come out, do I need to switch to it? Is there a lucky reason for this?

There's currently no extended functionality that I know of (well, the changes kernel patches normally make are applied by default ig).
When it releases (dunno when, ask Scires ig, lol, but it is done now), it'll be in an optional second "cool kids" testing zip, but will eventually be included in the normal atmosphere release zip by default.

I know that the core of the system is a very important part of the OS. Could the mesosphere, in theory, give free online for downloaded games from the Internet? Because the only online way is lan play, which is very limited and works in a small number of games

No. Buy games you want to play online, use sysmmc/emummc to separate clean/hacked systems if necessary.

The kernel doesn't touch any of that.
The Switch uses a micro kernel based OS, so the kernel is very small and only has basic functionality, while drivers, system programs, etc all run in userland.

Edit: also online service stuff is done server side

Not good, I thought that the core in the nintendo switch is more meaningful and performs program verification and signature of these same programs as on the ps3
