Yeah... Well Nintendo does like making unique ideas anyway, I could see why they would want to keep mixing up gameplay and certain key elements of the Mario franchise but I think making it completely open world seems off. Like you said how its Kirby but instead of making the cap different they go with a complete different remodel of how the Mario games should work, (I don't know how big the worlds are by the way but I'd assume they could only stretch so far until you reach a gap in gameplay and this odd emptiness but, I feel like they kind of went backwards with this Mario game, similar to how the legend of Zelda breath of the wild was applauded for its open world but it lacked any key story, (well for the moment its out.) .) But that's just me, I think just a classic Mario game that expanded on 3D World would have been good enough but I could see why some might find the open world element fitting for people who grew up with the N64 Version of the game.You know what it makes me think to?

3D World was good, but fans started to moan about how they wanted an open-world one like Sunshine and 64, and criticized than linearity of Galaxy 2, 3D Land and 3D World. Odyssey was the logical game to release, plus the 3DW formula started to get old...Yeah...
