Does anyone know if the Hori Pokken tournament controller will work on the switch, say in bomberman?
 
Pretty sure it was designed exclusively for use with PokkéTournament and will not function with other games let alone a different console.

Wasn't there an adapter for the Wii U to support older gamecube controllers just for Smash?

Yes, but I'm talking about the controller only working for the specific game. They're adapting older controllers to the new system with that. Which was used in Nintendont as well. I still don't think the Pokken controller only works in Pokken.

If it does, then I've learned something new.

I'm just pointing out that, that was a controller and adapter that only worked for one game on the Wii U; so it doesn't seem that big of a stretch to me.

It was more or less the adapter.. Not the controller. It makes sense, but I don't see them as comparable.
 
The issue is not the controller working, it's supported. Since no other controllers are supported by the switch from the Wii/U I'd say no.

I do hate how Nintendo has these perphs that are locked to a single game though.
