I think my PS5 just downloaded an official update in the background, but fortunately did not install. Is there a way to delete this? Also, is there a means to prevent the console from getting a firmware update from Sony's server (e.g. custom DNS, etc.)?

What firmware are you on? Already jailbroken or nothing done yet?

All depends on that

You could use alazifs dns u find it on the First Page at the ps5 exploit Guide thread

There are two options to delete the update: if its jailbroken ftp in and delete it manually

Or if Not jailbroken use recovery pup firmware for a fresh start if youre choose to Go that Route backup your Account to an usb

On FW 6.02, I found a way to delete the unfinished update download by navigating to the notification about it, opting to cancel the download, and deleting it from there.

There's this "PS5 Explorer" app that allows you to browse folders directly in the PS5. I'm just not sure if the Update folder shown on this app is really the same folder the FTP browser would show me...
I'm getting prompted to update the system when launching games, even when I'm offline, but I don't get prompted to update when I put the ps5 in sleep mode.
Any idea if this update prompt is just a "fake" one (i.e., I don't really have system update files in my ps5)?
