I don't have a capture card so I can't rip it that way, but is there another way to extract the game's music if I have a modded Switch? It is not available anywhere online.

ALL games are different and so are the music formats that they use. This is not just true for the switch but for every game system. Some use ogg, some use mp3, some use other formats you've never heard about and some can be stored in container files such as PAK, etc.

What I am saying is that there is no guide that can tell you how to do this, unless you type the actual specific game name and then someone might be able to help you. Otherwise you can can capture the audio in various ways, such as hooking the switch dock up to an HDMI splitter and record the output and then split the audio from the picture. Or capture straight from bluetooth audio or from the headphone jack.

How would I capture it via the headphone jack? Bluetooth is fine too, I guess, but I'd like a higher quality rip if possible.

The music seems to be in a .bank file, which I don't know how to process.

Use the line in (cyan) port on a desktop
Mic in works too, but needs to be a dedicated mic in, the combo jacks on most laptops have mono mic only.
Mic in will have slightly more noise because it's amplified.
