AFAIK there is no way to force other people's eggs to be shiny, as their eggs are calculated by their own game; they would need to use some code themselves.
If you want other people to have shiny eggs, get the eggs yourself while using some code that makes them shiny then trade the eggs over.
What issue are you having? I kept giving me bad reads in a scarlet save that i got from here so I loaded up a pretty much legit save of violet which never had cheats active and it works fine.
I have noticed that when I activate "Inf. PP" and "Inf HP", the auto fight feature doesnt work right any longer....when I send a pokemon into auto fight, the health drops instantly down, even on low level enemys.
In normal fights the "Inf" setting doesnt work, also.
Anyone else facing this issue?

The red just means it qualifies for the corresponding size title. You can have perfectly legal size 0 or 255 pokemon, look at the checkmark (or warning sign) besides the pokemon icon for whether it's legal or not.
I made a modified encounter code that tweaks encounters so all pokemon of a certain type have the form you choose. For example, you can have it so every Rockruff that spawns is an Own Tempo Rockruff, or every Sinistea is an Antique one, without changing any other pokemon that is spawning.
You should never have this enabled at the same time as the regular encounter mod; I've intentionally used the same code cave, so it has the same off code and uses the same pokemon encounter codes. It ignores the codes for level and held item, though, keeping those the pokemon would already have.
Some example codes that should allow you to get perfectly legal rare-ish pokemon by hunting their most common variety (though in the case of Sinistea only if caught at the South Province Area Six, as that is the only place Antique Sinistea can spawn). I didn't test them all, but they should work:
On pkhex, go to the tab that has your buttons to bring up item edits and things and find where it says something like edit block key data. Look for the value in the list that mentions 6 star raids and change the value from 1 to 2
