Regarding the app they did so that banned users can use YouTube, I was wondering how they did it, probably editing the nsp files, if so, with what tools can you do that, and if there is any document or something similar explaining how they achieved it?

Same way I can use it without having Nintendo Online. It connects to Google's servers, not Nintendo's.

I highly doubt that. It's just programmed in the app to connect to Google's servers instead of connecting to Nintendo's servers. I'm not an expert on nsp files, so I can't say what they contain, but it's probably hard coded to connect to Google's servers or just some files telling it to go to Google's server. Pretty sure it isn't as simple as just changing the address though.

it's done by changing a value in control section0 nca in control.nacp file
