I use psnes for SNES, pfba for arcade and vbaNext for gba. Those are all standalone, but RetroNX works very well for lots of systems, including psx. I also use chocolate doom for doom, doom 2 and final doom, eduke3d for duke nukem and an openBOR port for some cool, retro inspired fighters and beatemups.
 
I like everything full screen. Also, I don't use RetroArch in that 'ecosystem' type of way. You can grab single cores/.nros.

pSnes for Super Nintendo

FCEUmm for NES, PCSX-reARMed for PS1, Genesis GX Plus for Sega Genesis, Gamebatte for GB/GBC, VBA-Next for GBA.
 
pSNES docked and RetroNX undocked, been playing Chrono Trigger on both emulators and it is kind of annoying the little slowdown before every battle on pSNES, but it works pretty good while docked and I like to use my SF30 pro
