The WiFi in my house is really shoddy where my Wii is, can I use a USB ethernet adaptor in place of it? I ask because a lot of homebrew explicitly calls it's networking features WiFi.

Exactly, only preloader wont work, crediar forgot to include the command for it, but maybe for v0.29 will be fixed...!!!
