Will SX OS ever be able to overclock the Switch or is there a way to do this already that Im not aware of?

You cannot, anything can possibly happen in the future but it's impossible to say "yes it will happen one day" who knows.

SX OS themselves have to write/copy or at least enable it, its out of brewer's hands at the moment.

I think that should be possible as "OC" is officially supported in FW now.
