I have no idea where to find the answer to this question.. We just got this old arcade machine plugged in at work and we'd like to make it so that we don't have to put quarters in. We've taken the front off and can manually hit the "quarter switch", but there's gotta be a way to turn "free credit" mode or something, right?

Arcades always have a service menu. I don't know the specifics, I've never operated an arcade to know how to access it.
Inside that menu you can change coin settings(there should be the free play mode), test controls, sound, video, memory, set difficulty and even see the statistics of how much money the machine has taken.
