Dark Souls is moddable for months. For example we have HQ Audio mod.

Modding Dark Souls was an extremely laborious process that required developing custom scripts for archive extraction and repacking and then hex injecting hundred of files by hand in the right places.

I tried to unpack the NSP files with hactoolgui and other based NSP extractors, it simply errored out for me and did not work.
You may take your chance at unpacking the NSP file of the game and taking a look inside.
The guy who said "he did manage it" clearly is not community friendly to post anything.

BTW here is some support:
Share the exact name or preferably link to your VPP extractor.
And try to write clear instructions on what to extract (either on the PC port or the Switch port).
Then support will come!

I had trouble to unpack it too because of hactool and i don't remember if i used an xci or an nsp to get the romfs

Okay mate upload and link me the unpacked romfs.

This game needs more attention than the 0 it's getting, so let's make this happen!
