Why are you using windows server?

Personal preference. That and it was an interesting task to see what it took to convert it into a workstation. By default everything is set towards giving priorities and resources towards servers/background tasks, and things you take for granted like the restart/shutdown/sleep options being on the Start Menu aren't there initially. Of course, I tweaked everything in a VM before moving to physical hardware; would've been silly to cage myself in something I had no way out of. Now it's basically Windows 10 minus the crap: no Cortana, no Windows Store, no Modern apps, and it still has DirectX 12, and runs everything I need (mind you it did take a lot of tweaking).

That sounds really cool, I kinda wanna do that when I get around to buying the parts for my gaming computer, but it also sounds like it'd be a bit too big of a pain in the ass for me to do since I haven't done much screwing around like that with Windows yet.
Maybe it'd be a good learning experience, actually.

I'd suggest doing it in a virtual machine first so you can export the group policy settings and stuff before actually installing on real hardware.
