I already know that the new 3DS has two extra cores and is clocked around three times more than the old 3DS, but has someone ever experimented on overclocking it?

Nah. I do mean going over the 800mhz limit.
I'm not sure what extra hardware you'd need, how much you can overclock, or if it's even possible since Nintendo has questionable decisions on getting their consoles to run.

I wonder if any hardware modder has thought of trying this before.

The 3dsdev guys tried to increase the clock via software means but were unsuccessful. The only thing they could manage is setting the clock to 536MHz. https://3dbrew.org/wiki/PDN_Registers
I'm sure hardware overclocking should be possible (it was done on old3ds) but not worth the trouble.
