Normally you don't need any patches on your Switch itself to make lan play work? At least if you don't want to use games that don't have native local play. The recommended internet configuration and the PC server should be sufficient.

Edit: that said, I just tried it out and lan play doesn't seem to work or to be maintained anymore. It did not work, and their website is stuck on a loop on most browsers.

Even though you can make it work after jumping through many, many hoops (like using a specific browser to display their website for example), it's just not worth it in my opinion. I managed to make it work and I've played a few "lans" and tournaments and it it's rare that a race will go to the end before it disconnects. People will tell you that it's normal and to be expected.

I personally got a copy of Mario Kart 8 and NSO on my unhacked Switch. Way less headache.
 
Is this only for multiplayer within software or can consoles do (faked/transfered) 'local' communication in general?

Like, are things possible that just require the consoles to be near each other (examples like locally gaining a software update from another console or pairing for the use of vistual game cards) or is this service specific to transfering local data for certain software only?

You're thinking of something akin to DS download play which AFAIK no Switch game supports. Either way, both consoles need to be connected to Switch LAN play which the target console cannot connect to if it doesn't have the original game.
