Not exactly sure what I'm doing wrong here; I used Simple FS Dumper 0.2 to get the NAND file system, I put it in the NAND folder of my USB HDD, I went to WAD Manager 1.7 , selected IOS249, selected NAND Emulation from USB 2.0, went to the GH5.wad and told it to install; but still I'm getting error -101. I know I've probably skipped some big step so by all means fire away.

Use ShowMiiWads to install wads to your emulated nand on your USB drive, you will have to plug it into you pc to do this
