Black Inkling Girl, Splat Buggy, Metal Tires, Hyrule Kite.
Gives both good speed and decent acceleration, with the perfect handling (for me, anyway).

Link, Landship kart, Roller tires, Hylian Kite. It's amazing for drifting and has decent acceleration.
