It has been almost 2 years since I last used my Wii, and since then I have lost my SD card. Is there anything specific I have to do, or can I just simply use another SD card and use it to store all my apps (bootmii, priiloader, usbloader etc)?

You'll have to configure your USB loader again but Priiloader should keep the configuration (but you'll need the hacks_hash.ini if you want to change the active hacks IIRC)
If you haven't used your Wii in 2 years you might not know about Nintendont, it's the best way to run GC games and it supports Wiimote+Nunchuck, Classic Controller, Wii U Pro Controller and many USB controllers so you don't even need a GC controller to play GC games. Highly recommend checking it out. Once placed in the apps folder on SD just enable Nintendont from your USB loader settings.
