I read a load about the iTouch and that it can boot the sakura firmware, what I want to know is what are the cons of the Sakura on the iTouch.

One specific detail I really want to know, can it load commercial roms on the sakura firmware, or is it the same problem like with the dldi version?

No RTS in Sakura. Well at least not the V1.12 I have tried.

You can only get earlier versions of Sakura and the M3 Real firmwares to run on the iTouch, the M3 Team added extra protection to them to stop them from running on the iTouch.
